| Review: Pamela's Products Chocolate Cake mix
I'm in love! I finally found a GF chocolate cake mix that is rich, moist and so good you need no icing!
I made this last Shabbat and the group I have over all loved it. I made some cherry brook vanilla icing to which I added some hazelnut extract to, and topped it when served with fresh raspberries.
I love how Pamelas mixes give you various ways to make them. I tried this with their brownies, but this cake came out so good, better even than any other chocolate cake mix I've had ( the regular kind even).
I looked over the various methods,
Ultra rich Volcano Decadent pound one ingredient Mocha Egg-free
and choose to try a combo of two, I added 1 1/4 cups of mayo ( next time I will try the sour cream) and 1 very large egg. I didn't cut down on the water . I baked it for 25 minutes in a 9 x 13" pan and then checked and it was done.
This was so good I went out and bought 2 bags of mix and now have to bake and eat them before Passover because they do contain baking powder.
The flour ingredients are white and brown rice but I did not get any gritty taste like I usually do with anything made with this kind of flour. Makes me wonder how that is?
I have been thinking about how to eliminate that and thought to first soak the rice flour in the liquid ingredients for a bit and then add a bit more with the rest of the ingredients. Not sure if that will help but will try it in my next recipe calling for rice flour.

| Got it again and tried it with the sour cream this time. I really like this way, maybe better than the mayo. It came out very moist but springy, like a chocolate sponge cake. I made icing but it really didn't need it.
I used Cherrybrook chocolate GF icing and remembered last i used it , it wasn't very chocolaty, so I added about 2 tbls cocoa, and some hazelnut Gf extract, used cream instead of milk and more than called for. This came out really good, Oh and I didn't have the butter softened and didn't have time to do so , so instead I used my non gmo , organic shortening, and it didn't alter the flavor at all I thought.
This is extremely good and I will have a hard time not eating too much of this, after going GF I rarely eat any cake or even that much chocolate any more, but this could change that!  _________________
