This recipe I found when I was cleaning out my email (which I started yesterday evening). I saved this from a few years ago when my family was first going Gluten Free.
I think this can use some tinkering, perhaps by adding xanthan gum or guar gum to the recipe.
This one is from Lynda in Alaska.
Harvest Pancakes
2 cups flour (I have used any number of flours including gluten free blends)
4 teaspoons baking powder
1 teaspoon salt
2 Tablespoons +/- Sucanat (or maple syrup)
2 Cups milk
1 Tablespoon melted butter (or coconut oil)
1 cup pumpkin/squash
2 eggs, seperated (I didn't usually separate or beat the whites)
1 Tablespoon pumpkin pie spices or curry or ??? (optional)
1/2 cup chopped nuts or seeds (optional) (toasted pumkin seeds are yummy!)
Sift together dry ingredients. Add milk, melted butter, pumpkin and beaten egg yolks; mix well. Beat egg whites until stiff peaks form; fold into mixture (along with seeds if used). Cook on hot griddle.
