I just found this today in my local health food store. I hadn't come across this anywhere I have checked out GF stuff, so was thrown when I saw it. It wasn't cheap so I hope it's a good thing, $4.89 for 7 oz.

It is by Orgran, and is called Gluten Free Gluten

This is whats on the box:

Instant workability
Makes gluten free baking easy
GF, Wheat Free, Dairy free egg and animal derivative free ( so Vegan)'

It is certified by the Melbourne Kashrut of Aust. parve

No yeast, GMO FRE, soy free, no added cane sugar

Available in over 40 countries

Made in Carrum Downs Vic Australia

Ingredients:superfine rice flour, pea extract, maize starch, vegetable derived gums and cellulose, guar gum, methylcellulose, caboxymethylcellulose, monoglycerides from vegetable

Made from local and imported materials

Directions:
Add 1 part GFG to 5 parts Gluten free flours ( rice, potato starch, maize starch or blend, etc)

Suitable for pizza, batter type bread, scones, muffins, biscuits, cookies, and most baked foods and pasta with ingredients of your choice

In simple terms, GfG is similar to adding gluten to your flours and is a superior replacement to xanthan gum which has traditionally been used as a binder in gluten free flour recipes.

Suggested flour blend using GfG
2 parts rice flour + 1 part maize starch + 1 part potato starch.
Add 1 part GfG to 5 parts of this blended flour (20g / 0.6oz GfG to 100g/3.5oz flour)

Why not CMC or Xanthan Gum?
CMC and Xanthan are both single function additives.Both will provide some binding properties but have limitations in baking or cooking. As a comparison to xanthan, baked goods with added GfG result in greater
volume and a more uniform texture.

Where do I buy it from?
Orgran GfG is currently available in Coles and Woolworths/Safeway supermarkets in the health food aisle, independent supermarkets and health food stores. If you are having trouble locating Orgran GfG or would

All Orgran dry pasta varieties are certified Kosher, as well as a
growing list of biscuits and packet mixes. Look out for the logo on the
product packaging. If you would like a current list of products that
are certified Kosher, please contact us directly
