Bete, I think that you are going to have to chain me down or something. I'm up to it again! Razz

I saw this recipe on Gluten Free Mommy, and I MUST, must - MUST! - try it.

I think I am honestly sick in the head or something! LOL Very Happy That or baby is just needing certain nutrients and I am finding them in all these lovely recipes so I have to have a little of this today, a little of that tomorrow. By the end of this, I'll have so much cake frozen to eat in the next month or two! Embarassed Then again, that is really handy if we keep having guests every Saturday night...!

Gluten Free Mommy's Carrot Cake

Most cakes and cookies will stay in the freezer though for 3 months quite fine, if you are careful to get as much air out of the plastic baggie as you can. I don't like having to cook on Saturdays, and I get the "pressure" feeling when we get that last minute call if it's ok to come over and socialize from DH's two best friends.. so I can see me cooking more during the week and freezing sweets ahead.

Speaking of cookies... I found the chocolate icing I made a couple months back (still good and in the fridge), so I'll make sugar cookies today and 'milano' them up with icing in the middle.

It's in the oven almost ready to come out. I didn't realize this until I went to make the cake, but she forgot to list the amount of butter needed in the actual cake.

I found the original recipe posted online here which lists it.

it was soooooooooooooooooo goood! Sad So good, I must cry as I type it... Wink

My DH wasn't so happy I put rum flavoring in the icing, but I have to say it is an awesome, awesome carrot cake and I love the cream cheese icing.

I have icing left over actually... I think I need to make some muffins or something to go with it.. What is it with me and sweets this month? Embarassed
