This is my grandparent's recipe. I modify it by using ground beef or lamb, and sometimes use a mix of both lamb and beef.

Grandma said you could do it with ground turkey or chicken also.

salt
red pepper
sage
sugar (a little)
black pepper

Put the seasoning in it.....Mix with your hands. After you mixed it in well, fry up a small patty. After it is cooked, then taste the meat. Decide if you need to add more seasoning to the rest of the meat. If you add more, then do another test patty until you have the seasoning at the right taste.


I tend to make mine like this:

1/2tsp salt
1/2tsp red pepper
1tsp black pepper
1tbs sugar
1/2tbs sage

I've gotten where I made it so much I don't look at the recipe anymore and switch up the spices. Sometimes I throw in some paprika also.
