This thread is for posting Gluten Free books that mainly cover Food. There is another thread for posting on books and articles about Celiac Disease here.

I will be adding to this list from time to time but if you know of a book and have it or used it from a friend or borrowed from the library, please feel free to share it here, using the outline of info I've given below. Smile

PostSubject: Gluten-Free Gourmet cooks Comfort Foods - Bette Hagman   GF books EmptyMon Oct 08, 2007 3:08 pm

My first choice for this category is the 'Gluten-Free Gourmet cooks comfort foods' By Bette Hagman

She is a phenomenal GF cook and this is her sixth book? or more?

It has a lot of helpful information about new flours and how to use them, and where to buy them as well as many tasty recipes, and nutritional info for each recipe like Calories , fat, cholesterol, sodium, Carbs, Protein and fiber, very important I think on a GF diet.

You can see the index and contents here

There are over 200 recipes in this book by Bette Hagman , Amount of them that are Kosher--134

Here's a partial owners review from Amazon

Quote :
Bette Hagman's books are lifesavers and Godsends and I have them all. She makes the art of cooking gluten free and keeping a gluten free kitchen easy, logical and workable. You don't have to separate the wheat from the chaff - just regard the wheat AS chaff and you are on your way to a gluten free lifestyle!

Cooks who follow Bette's methods do work - you will need several different types of flours to make breads and bread desserts, such as cakes. Be sure to freeze your foods because they won't last long. It is also a good idea to cook in portions so as to prevent food from going bad.

Thanks to Bette, I have learned about hemp bread for celiac disease and for anybody following a gluten/casein free regimen and Teff Flour.

Read more and buy the book here

I have gone through each recipe and judged by the following criteria if it can be made kosher without changing too much or eliminating too many of the main ingredients. If there is only bacon or cheese added in a small amount and recipe remains do-able without it, it is included in count. If just removing one item, even though Kosher ( like ground beef from the lasagna) will still allow it to be made and taste similar ( again like the lasagna with the remaining cheeses, but just eliminate the meat), or in other instances, recipes call for turkey or pork sausage. There are kosher turkey and other sausages available in some places so I added these in the count. Also many dishes call for butter which non Dairy marg. can be substituted for.

So out of her 200+ recipes I have found that the following can be cooked following all Kosher standards. The second number is those dishes in those categories that are vegan with just a change of chicken broth to veggie broth or same elimination of any meat products like for Kosher. NO cheese *(or use vegan cheese) no eggs either. The breads and desserts contain many eggs, which can be replaced with egg replacer by EnerG product here So I have included in the count for the Desserts and bread only if there are eggs that can be replaced, not dairy.

***I have been trying to find a Kosher chicken or vegan soup base for the one recipe but can't, anyone with info please let me know.

The 125 Best Gluten-Free Recipes (Paperback)
by Donna Washburn and Heather Butt

Beautiful color pictures of some of the offerings. I have tried the glazed lemon coconut loaf as my first try, using the zest and juice of my etrog. Smile It was very good, the coconut gives it a bit of a grainy/chewy texture which isn't a bad thing. The glaze method makes this really lemony! This would be great served in the summer as it is very refreshing, or maybe as a spring time dessert when anticipation of summer is high!

If you're not a lemon fan, you can substitute orange which also goes well with chocolate, and is sweeter and less tart. My overall sense of this recipe was that of a lemon meriange pie, you had the tart of the lemon but a high sweetness too, like the merange and less calories too I think.

There is no nutritional info on each recipe though, that is the only drawback I see in this book.

This is also good with some GF chocolate sauce zigzagged over the top or whipped cream too!

Here is part of a customer review from Amazon:

*125 Best GF Recipes*, however, is my new favorite book. Unlike some other cookbooks that include recipes that bear astonishing similarities to Hagman's recipes, Washburn and Butt have devised new, intriguing, useful recipes that use even *fewer* ingredients than traditional GF recipes. One of my favorites is the "Lavosh," (p16). I omit the yeast and the vinegar (there's no proofing time, anyway,) and add a 1/2 teaspoon of baking powder. Then, don't spread it as thin as a cracker, but pretty thin, and bake it at 375F. You get something between pita bread and Indian fry bread. Phenomenal! And in under 45 minutes from start to eating! This has become my staple bread recipe.

PostSubject: "Get Off Gluten!" -- NEW Book -- (whole foods and parve)   GF books EmptyThu May 29, 2008 10:19 pm

I just wrote this book -- and it is just now available. It's called Get Off Gluten! and is unique in the world of GF because almost no refined starches are used in the recipes, the fat is very reduced compared to the more conventional way of preparing these foods, and there is no meat, dairy or eggs either (which helps to lower the risk of developing other diseases which celiacs are at increased risk of developing.)

There is some information in my book, but mostly it is recipes -- lots of fabulous salad dressings and sauces, whole grain blueberry muffins, a plant based alternative to tuna salad, and some wonderful chocolate chip cookies which are half ground flax seed -- but you'd never know that by tasting them. Also I have a unique whole grain gluten free sourdough bread with no added oil, sugar, dairy, egg or refined starches that tastes great.

You can learn more about my book, see the table of contents and access some excellent scientific information on my website www.getoffgluten.blogspot.com (or just www.getoffgluten.com works too)

Hope this is helpful
