When we got home yesterday after
taking a ride up to the mountains to see the fall colors, I was going to make
something on the grill, but it got so late I decided to make something from
leftovers from Erev Shabbat. So I took the left over chicken, and the brown and
wild rice I had cooked with it and cut up the chicken and put it in the steamer
with the rice. Then I cut up some broccoli to add in the last few minutes to
steam.




I had baked this plain, in just water with the rice, knowing I couldn’t' use
what I always had, the cream of mushroom soup, so I wanted to try my hand at
making a sauce to go with it and hopefully make it better tasting.cheers



So this is what I came up with.



1 can chicken broth ( Manischewitz)

1 org orange, squeezed

1 tablespoon ginger juice

3 cloves of garlic, chopped

2 tbsp Corn starch mixed with water



I cooked down the broth and juice, and then added the ginger and garlic. When
it looked reduced enough, I added the cornstarch mixture and whisked it in. It
tasted really good on the rice and chicken and I even poured some on the
broccoli, kind of like an exotic hollandaise.



But 1 1/2 hours after I ate (which is my timing to present with gluten attack)
I started feeling the pains, and headed for the bathroom. It wasn't good. Embarassed No



When I came out I told my husband how bad it was then sat there and racked my
brain to think what I could have gotten into. confusedconfusedconfused



Now I know ( I threw out the can while I was cooking as hubby was taking out
the trash). The Chicken broth. Manischewitz contains MSG! affraid I haven't found an organic kosher source yet
and had the Manischewitz Chicken broth in the cupboard ( the one I haven't cleaned out yet). This
was the culprit!Suspect No Suspect


So now the leftovers from that I thought I could have for dinner now go to my
husband.



I think this sauce would be good if I can find a Kosher org chicken broth or
will just have to make my own.Very Happy Smile

So, I went hunting and am happy to announce I have found a GF, ORGANIC< KOSHER , Chicken broth!!!!!cheers bounce cheers

Imagine!

Yes, Imagine, brand, whose soups I already get, and wasn't sure of so gave to my husband. I didn't see on the back panel what it said.

They have a wonderful variety of soups too!

I will post this in the soup category for sources so it can easily be found!

So , about the MSG, this is what I found out.Manischewitz and Rokeach soups both contain MSG.
So what's the problem?

Celiac Sprue is a disease involving the intestines and it is extremely
important to avoid gluten containing foods like wheat, rye, oats, and barley to
prevent further damage to the absorptive cells lining the intestinal walls.
A veterinarian, recently diagnosed with celiac disease, has
developed a theory about how celiac disease and the excitatory neurotransmitters
glutamic acid and aspartic acid play a role in the damage caused by this
disease. We have recently found that many persons who report a sensitivity
to MSG also report an inability to tolerate wheat products in general.
This seems an odd coincidence until we realize that, grain products have been
bred to contain more and more gluten which is very high in the amount of
glutamic acid bound into its protein chains. This fact figures prominently
in this veterinarian's theory on why wheat can be such a problem for many
people, and why, perhaps, it wasn't meant to be in our diet in the first place.

Wheat is such a good source of glutamic acid, as is
soy, and corn, that MSG is often made from these foods.

Doh! I need to get a doh! smilie! Smile

So that solved my puzzle, at least I know why now.

Beware because many GF sites for celiacs tell you it's OK to eat MSG, but if you know you had a problem and nothing else could have cross contaminated, look if there's any MSG.

This is good to know.

I have always had problems with MSG, but if you really look back on my history, I've been classic celiac for a really long time (really since birth)... Neutral

Most of my family reacts to MSG in a baaaaaaaad bad way... so I wonder if they'd pay attention to that article or "write it off" since it was a Vet that wrote it. Rolling Eyes

I think the MSG out here is Soy and/or Corn based. IF I order chinese, I get it with no MSG, only the one gf item I can definitely have and love has it... Suspect Isn't that awful?

I need to figure out how to make Springrolls/Lumpia myself so I don't run into that problem. They sell the rice paper for that at the asian market, it can't be that hard, can it?

I used to love spring rolls! But I don't trust any Chinese resturant to make my food kosher enough so I don't go there. I make many a stir-fry, but never got round to trying spring rolls.

I don't know why all the sites I have been too that have no no's for celiacs say you can have MSG. That was the only thing in my meal or anything that day that could have effected me. I keep a diary so I can look back and see what I ate if I have an attack. I ate the same thing on Shabbat so the only thing different was the chicken broth in the sauce I made, I sqeezed fresh OJ , so not that, I put in some organic ginger juice, 100% which I've had before and was fine, so only the Cbroth could be the culprit. Hubby got to take the rest to work for dinner, Sad I thought I would have something for me to eat, but no. I guess another Amy's rice Mac and cheese for dinner! Smile
