Here's a source for powdered eggs so you always have them on hand.

Dried Egg Yolk (Powdered) Gluten free, Kosher

Natures flavors dried powdered egg yolks are excellent for cooking,
Baking, and adding fats to foods where fat is necessary to achieve a
smooth textured product.

An example would be in making sauces such as hollandaise, or making a
powdered custard mix, or a powdered ice cream mix like gelato where
additional fat is a must. They create a smooth texture and good mouth
feel by controlling crystallization of the water molecules. The dried
egg yolks are pasteurized so they are very stable for long periods of
time.

When storing dried powdered egg yolks or egg whites you should keep
them in air tight resalable containers away from heat or large
temperature swings. It is also important to keep dried egg products
away from direct sun light or artificial light as that will cause the
eggs to oxidize quickly.

This is especially true for dried egg yolks due to there high fat
content. Using powdered egg yolks or egg whites in cooking applications
produces good clean results consistently time after time that’s why
manufactures overwhelmingly approve of dried egg products over the
alternative of having to crack and separate the egg yolks from the egg
whites. Also you don’t have to worry about potential bacterial
contamination as once they are pasteurized and kept dry until used they
are usually free of this problem. Once you hydrate them than they must
be used right away. Shelf life of dried egg yolks is about one year or
more with no refrigeration required. Dried egg yolks are an excellent
emulsifier especially in the formation of mayonnaise, or salad
dressings or any food was water and oil will need to be mixed together.



CONVERSION:
2 tablespoonful of Egg yolk powder + 2 Teaspoonful of water = 1 EGG YOLK

I am so thrilled! I found K Org Lamb shoulder in the supermarket the other day! We had it on the grill and it was so delicious! Fresh, not frozen. From a company called Solomons. It is glatt kosher, no Hormones, no antibiotics! OU certified USDA certified Organic

I can't find anything and see if they are kashered first, so I will do so until I hear more.

Are Bumble Bee's products gluten free?

Again, I have tried one kind myself, I wish my store carried all of them. This was back a few months ago but I remember I like the flavor although cooked on the grill they were a little dry, but that could be easily remidied by oiling them or serving with a sauce after cooking.

Now I can throw the package I've been saving for months away, I saw them in the store again yesterday!

Those sausages sound great, my DH loves sausage, hope he likes this kind.

I just wanted to add that there are canned Sardines that are Kosher and GF, and taste pretty good too.
