I thought I would start a thread where we could gather some pizza crust recipes together

This one I found on the Garbanzo and Fava Flour bag from Bob's Red mill ( BRM)

1 Tbsp GF dry yeast
2/3 c BRM, GF Garbanzo and Fava flour
1/2 Tapioca flour
2 Tbsp Dry milk powder
2 tsp Xanthan Gum
1/2 tsp Salt
1 tsp Unflavored Gelatin powder
1 tsp Italian Herb seasoning
2/3 C warm water ( 105)
1/2 tsp Sugar
1 tsp Olive Oil
1 tsp Cider Vinegar
Cooking spray

Preheat oven to 425
In medium mixer bowl blend the yeast, flours, dry milk powder, xanthan gum, salt, gelatin powder, and Italian seasoning on low speed using regular beaters. Add warm water, sugar, OO, and vinegar. Beat on high for 3 minutes. Add water if the dough is too stiff. You can do this in a bread machine on manual setting. The dough will resemble soft bread dough. Put mixture into 12 inch pizza pan that has been coated with cooking spray. Sprinkle extra flour onto the dough, then press the dough into the pan. Bake the crust for 10 minutes. Remove from oven, top with your favorite sauce and toppings.
Bake for another 20-25 minutes.

I have been gathering many recipes and finally tried this one last
night. I don't think I baked it enough, so will let it go a few more
minutes next time. yes it was good enough to be a next time. It was very pale on bottom, reheating in the toaster oven didn't make it any browner, so need to do so. Also baking on a new pizza stone may help.

Also another of Roben's recipes


Pizza Crust

1 pagk of yeast or 2 1/2 teaspoon of bread machine yeast
mix with 3/4 room temp milk ( or warmer)

1/2 C potato starch
3/4 C potato starch
1 tbsp xanthun gum
1/4 teas BS
1 Teas BP
1/2 sea Salt
1/4 C organic shortening

Mix milk with yeast in measuring cup, leave for a few minutes while you measure the dry ingredients

Put all dry ingredients into med to large bowl, add shortening, cut into to fine crumbs with pastry blender, or two knives. Mix in yeast milk mixture, to form a soft dough.

Line pizza pan with foil, spray with cooking spray

Place ball of dough in middle and with wet hands pat carefully from center out, turn pan, and start at center again until all is out to edge, you can form a crust if desired.

Top with your toppings, or add , thick sauce and spread carefully, about 4 tablespoons worth. Top with variety of cheese, sprinkle some olive oil on after topping with Italian herbs, fresh or dried. Olives, red peppers are also good. Bake about 15-25 minutes or until browned on edge, cheese melted, check bottom.

TEMP OVEN 375

Enjoy, lable and freeze leftover for quick snack heated in micro or toaster oven.


The cheeses I used were mozzarella, sharp cheddar and laughing cow , which is vegetarian and GF
