Rice Cakes, remember them from about 10 years ago? bland, nasty tasting, diet food for cardboard boxes? They haven't gotten much better, but now they are a staple in Celiacs bread box.

These are what is in mine, they are very hard to find too.

Lundbergs

Brown Rice
Wild Rice
Tamari and Seaweed
Cinnamon Toast ( this one was particularly hard to find, had to go to a health food store!) They are organic as I mentioned and certified by halfmoon K, and vegan

I really don't care for many of them at all, they are too crumbly. I do occasionally spread the cinnamon ones with peanut butter or cream cheese but only if it's soft.

A note about the Seaweed ones. I just found out recently that Nori Seaweed must be certified kosher ( and I don't think anyone is doing so, because it is so tedious) because they have found that baby seahorses hide out in this seaweed and are present on it, so no sushi! Sad These rice cakes are certified Kosher though, so no worry.

I would like to try their Sweet Green tea with lemon and the Toasted Sesame, but haven't come across them yet.

Actually my favorite non gluten cake is a corn cake, thins.

Real Foods Corn Thins Original 150g

Crispbread slices with the great taste of golden sun-ripened corn

Serving Suggestion

Delicious with smoked salmon, avocado and Spanish onion, with a sprinkle of lemon pepper. Or top with baked ricotta, semi-dried tomatoes and fresh basil.

Ingredients Maize (99%), sunflower oil, salt.

If not in your local stores. There is the original like above, and there is Sesame Corn too and Flax flavor and Multigrain.

I've had the original and multigrain and love them and recommend them both.I ate my last ones today. I put them in the toaster oven ( just keep a
watch on them ) on the med toast cycle with some cheddar cheese on top.
When it melted and the sides did brown a bit but not burn, then I
topped it with thinly sliced tomatoes and drizzled a bit of EVOO on
them and snipped some basil on that. Boy were they good, this is my
pizza sometime. I also like to make 'sandwiches' out of them, here' how.
Spread cream cheese on both sides, to keep from breaking put cake on plate or counter so it is flat, and spread cheese ( you can use mayo too if you want) then top with anything else you can think of! Sardines work well,
if using mayo you can top with sliced turkey, and tomato, or egg salad,
tuna salad. I love these and they last a long time because they are so
thin. They don't crumble or break apart easily when you bite them.


You can also top them like the picture on the bag, fresh organic
mozzarella, with basil,evoo, and top with fresh tomatoes when melted,
maybe an olive or two.


I can't say enough about them, but one more thing, I gotta go get some, cuz I'm out! affraid

I just wanted to add, yesterday shopping I picked up 5 bags of the original. My husband has decided he really likes these and will be using them for his staple bread now.

This morning for breakfast he made three sandwiches with soft cream cheese and some raspberry jelly, he said they were really good!

I will have to be careful, I may lose my cakes ! affraid

They are really great, and light and easy to store, for months, so you don't have to worry about the bread going moldy or off tasting like other GF breads.
