Actually my favorite non gluten cake is a corn cake, thins.

I've had the original and multigrain and love them and recommend them both.I ate my last ones today. I put them in the toaster oven ( just keep a
watch on them ) on the med toast cycle with some cheddar cheese on top.
When it melted and the sides did brown a bit but not burn, then I
topped it with thinly sliced tomatoes and drizzled a bit of EVOO on
them and snipped some basil on that. Boy were they good, this is my
pizza sometime. I also like to make 'sandwiches' out of them, here' how.
Spread cream cheese on both sides, to keep from breaking put cake on plate or counter so it is flat, and spread cheese ( you can use mayo too if you want) then top with anything else you can think of! Sardines work well,
if using mayo you can top with sliced turkey, and tomato, or egg salad,
tuna salad. I love these and they last a long time because they are so
thin. They don't crumble or break apart easily when you bite them.
You can also top them like the picture on the bag, fresh organic
mozzarella, with basil,evoo, and top with fresh tomatoes when melted,
maybe an olive or two.
